Stuffed cannelloni


Cannelloni is a type of pasta that lends itself to various savory fillings based on vegetables and cheeses. Many recipes include i stuffed cannelloni with meat but the recipes that we now offer exclude animal derived ingredients. These are two vegan recipes that include lots of good fresh seasonal vegetables, preferably from organic farming.

Stuffed cannelloni of mixed vegetables, the ingredients for 6 people
12 pre-cooked empty cannelloni
1 package of soy b├ęchamel
6 carrots
6 courgettes
2 peppers
50 grams of grated Parmesan cheese
A handful of pine nuts
A glass of white wine
A handful of raisins
Extra virgin olive oil
salt

Stuffed cannelloni of mixed vegetables, preparation

  1. Peel the carrots and cut them into small pieces
  2. Wash the zucchini and peppers and cut them into small pieces too
  3. Pour the vegetables into a non-stick pan and add a drizzle of oil
  4. Let it brown for at least 15 minutes, stirring occasionally with a wooden spoon
  5. After the time has elapsed, add the wine and let it evaporate over high heat, stirring often to prevent the vegetables from burning
  6. As soon as the wine evaporates, turn off under the heat and pour everything into a large bowl
  7. Then add the b├ęchamel, raisins, pine nuts and mix until you get a homogeneous mixture
  8. Take the empty cannelloni and fill them with the mixture just made
  9. Place the stuffed cannelloni on a baking tray lubricated with oil
  10. Put in a preheated oven at 180 degrees
  11. Once cooked, take them out of the oven and garnish with a few mint leaves

Stuffed cannelloni pumpkin and potatoes, the ingredients for 6 people
12 pre-cooked empty cannelloni
6 medium organic potatoes
300 grams of organic pumpkin
a handful of pine nuts
Soy cream
oil
salt

Stuffed cannelloni pumpkin and potatoes, the preparation

  1. Peel the potatoes and cut them into small pieces
  2. Clean the pumpkin and cut it into small pieces too
  3. Boil the vegetables in salted water, drain, pour them into a bowl and mash them with the help of a spoon
  4. Add the cream and pine nuts then mix everything well
  5. Fill the cannelloni with the mixture and place them in a pan lubricated with oil
  6. Put in a preheated oven at 180 degrees
  7. Once cooked, garnish with a few mint leaves and serve
