How much CO₂ pours into the atmosphere to produce 1 kg of cheese? The question is made Nonno Nanni, that of the Montello Dairy of Treviso famous for stracchini and i cheeses fresh, which to give itself an answer on which to build an environmentally friendly strategy has participated like other major companies in Italy in the ban on Ministry of the Environment on the calculation of Carbon Footprint.
The operation launched in 2013 consisted of calculating thecarbon footprint of four leading products: lo Stracchino Nonno Nanni, lo Stracchino with probiotic ferment, Nonno Nanni Robiola and Nonno Nanni Squaquerello. The results were certified by the CSQA (audit March 27, 2013) and at the same time the company identified measures to mitigate the CO2 impact of its Italian stracchini.
And now? To offset the carbon dioxide generated by the production of stracchini is cheeses fresh the Latteria Montello will do two things: it will contribute to the construction of biomass energy production plants in Brazil (the production of CO₂ is a global problem) and the implementation of sustainable forest management action in Veneto.
The calculation of the Carbon Footprint has taken into consideration both the CO₂ that is generated for the actual production of cheese, therefore from the Latteria Montello plants, both the one that is generated indirectly for the production of milk in the stable. The data collected and analyzed refer to the year 2011.
It was found that milk production is the part that affects the most climate-altering emissions: cows are notoriously large producers of methane which derives from the metabolism of the symbiotic microflora of the rumen and which allows them to feed. Consequently thecarbon footprint per kg of finished product is relatively high, even considering the large quantity of milk required for the production of 1 kg of cheese.
In the case of cheeses Nonno Nanni, the overall contribution to Carbon Footprint resulting from the 'purchase of raw material and pre-treatment' is the largest, while the contribution of emissions from production in the plant, storage and end of life account for a very small share of the total. Also because Latteria Montello has reduced the CO₂ emissions during company activities, for example, by producing cold with an ammonia system with high thermodynamic efficiency and not harmful ozone, and significantly decreasing the vehicular traffic linked to the sale of whey and the supply of packaging.
The facts demonstrate that Nonno Nanni is a friend of the environment. In addition to interventions for the reduction of Carbon Footprint, in recent years the company has doubled the percentage of packaging destined for recovery; in addition, the Montello plant has been equipped with a wastewater treatment plant with biological purifier whose residues are used in agriculture thanks to their total environmental compatibility.
