Lentils are legumes rich in vegetable proteins, therefore they represent a valid alternative to foods of animal origin that instead contain cholesterol.
They have different sizes, colors and flavors based on the variety to which they belong and which we can divide into two large groups: small-seeded and large-seeded lentils. Plus, we can findred lentils, yellow lentils and black lentils.
Obviously no kind of lentilit should be eaten raw as they contain non-digestible substances that are eliminated by the heat of cooking. Let's see in detail how to cook lentils giving you all the necessary information.
How to cook lentils:differences between canned lentils and dried lentils
The dried lentils they must be soaked: procedure necessary to increase the digestibility of the legume and halve cooking times.
The canned lentils they are already cooked and can be used immediately in the preparation of the shift, without the need to soak.
PLEASE NOTE: when you buy canned lentils, already cooked, make sure that the product does not contain preservatives and dyes, while for dry ones, check that there is no parasitic organisms inside the package.
We do not recommend the purchase ofcanned legumes, includinglentils. Canned or canned foods are often enriched with salts or glutamate. Monopodium glutamate is used to improve taste but is not very good for the human body.
Which lentils to choose
As we have already told you, there are several types of lentils; lentils can be different not only in shape but also in color and flavor. Each of these variants is particularly suitable for preparing certain dishes so it is better to choose the type of lentil based on the dish or recipe to realize. In detail:
- Green, brown and French lentils
They are the best known (especially chestnuts) and are suitable not only for "complex" preparations, but also to be served alone, very popular are stewed lentils.
- Red lentils

- Orange and yellow lentils
Delicate in cooking like reds, they are ideal for use in the preparation of sauces, soups and stews.
How to cook dried lentils
Cooking the dried lentils it does not require special culinary skills; here is the step by step procedure in detail.
- Take the lentils and put them to soak in a large bowl filled with water
- Leave them to soak for at least a couple of hours, better if you can leave them in the water for a whole night before starting your recipe.
- After the time has elapsed, remove everything that floats: there may be debris or leaves that, accidentally, may have fallen into the collection. Lentils that have lost their skin should also be eliminated to avoid the purée effect at the time of cooking.
- Rinse the lentils under running water.
- At this point, put a saucepan with water on the stove and add the lentils: unsalted starting from boiling, let the lentils cook for about 20-30 minutes. If you haven't soaked them before, the cooking time is doubled!
- 5 minutes before the end of cooking, add the salt, better to put it at the end to prevent the lentils from hardening.
Your lentils are ready to be consumed or used in various and different preparations.
How to store leftover lentils
If you feel you have cooked too many lentils, that's not a problem; once drained, stop cooking with a jet of cold water then store them in the fridge in an airtight container. They keep well 4-5 days.
Stewed lentils, recipe
To cook thestewed lentilsyou will need… here are the ingredients for 4 people.
- 200 grams of dried lentils
recommended: ginger, curry, turmeric, fresh ground pepper.
- 4 spring onions
- 4 tablespoons of extra virgin olive oil
- 1 lemon
- vegetable broth, just enough
- salt, just enough
After keeping the lentils to soak, start the recipe for stewed lentils.
Peel and grate the ginger. Fry the ginger in a pan with oil, keep it only a few minutes. Then add a teaspoon of turmeric and the juice of half a lemon.
Coarsely drain the lentils and add them to the sauté.
Add a couple of ladles of vegetable broth and cook for 50 minutes, stir from time to time. If necessary, sprinkle with more broth.
Add the sliced onions. Cook for another 8 minutes. Add the curry and finish cooking for another 2 minutes.
How to cook lentils in a pressure cooker
Cook the lentils in a pressure cookerit's very easy: you just have to wait 20 minutes of cooking from the whistle of the pot! Remember to turn the heat down when you start to hear the pressure cooker hiss.
